Our advanced instruction covers baking and pastry operations with a practical repertoire of time tested recipes, further advanced and incorporated into our gourmet restaurant – Bistro 101, bakeshop – Bakery 101 and catering division built to hone real-world skills that will have you baking and creating pastries as a professional. We teach the science of good cooking for the food service industry. Your program starts with knife skills, culinary terms and equipment usage, followed by flavorful stocks, the art of the saucier, meats, poultry, fish, shellfish, vegetables, pastry and bread making – in a practical format that allows you to assess your creations using all your senses. Appreciate the difference an aromatic stock makes in risotto and taste a perfectly reduced port sauce for lamb. We offer instruction that covers the entire culinary brigade and cookware basics, with a practical repertoire of time tested recipes incorporated into our gourmet restaurant – Bistro 101, bakeshop – Bakery 101 and catering division built to hone real-world skills that will have you cooking as a professional. Full-Time Professional Cook Training Program This program is work-based training for the food service industry. Students who graduate from this program will have the skills for full-time employment in the food service industry. Since this is a working kitchen, you will be well prepared for success in the field. You will gain practical experience in cooking lunches, dinners and banquets. Most of the school day is spent in the kitchen environment providing food service for guests of our convention centre and residents of Cascade Court. This is a full-time program, 40 hours per week. Flexible hours are required, You will be scheduled to work evening and weekend shifts as is consistent with industry standards. Study time at home is necessary. Plan on two hours or more per day. Students who complete and pass the 12-month course will receive a Graduation Diploma from Cascade Culinary Arts School. You may proceed to Professional Cook 2 training if you desire. As well, you will be ready to write the Professional Cook 1 apprenticeship exam in accordance with the Industry Training Authority.

If you are already employed in the food service industry, the training you need to complete your apprenticeship in Professional Cook 1 and Professional Cook 2 is available to you at Cascade Culinary Arts School thanks to our provincial apprenticeship training contract. Each program consists of twenty-three sessions over twenty weeks. You can develop your skill base and advance your career training while you continue to work. One additional session allows you to write the qualifying trade exam on site. Part-time Professional Cook Training Level I (Next program commences February 15th, 2012)
